Dominique Joseph is the fourth generation vigneron of his family working vines in Saumur Champigny, based in the small town of Varrains. They own 13 hectares of vines mostly on clay and limestone soils that are farmed naturally without the use of chemical herbicides, pesticides, or any other additives. The single vineyard ‘Les Poyeux’ bottling comes from a southwest facing parcel of 0.85 hectares containing a higher concentration of sandy soils and is certified organically farmed. Average vine age is 55 years and Dominique destemmed 100% of the fruit for fermentation in concrete vats. He ages in 225L barrels that have 2-4 vintages of use and the wine sits for 12 months before bottling unfined and lightly filtered. Only 300 cases made. Pair with duck, roast chicken, and hamburgers.
