Adam Tolmach started Ojai vineyards in 1983 with a focus on making California wines under traditional methods found in Burgundy and the Rhône Valley. His assistant winemaker Fabien Castel has taken us through some extensive barrel tastings in the barn, proving vintage after vintage that they continue Adam’s classic approach, now 35 years along. ‘John Sebastiano Vineyard’ is located on the northeastern edge of Sta. Rita Hills and was planted in 2007, producing its first crop in 2010. Ruben Solorzano is the vineyard manager and is keyed in on numerous details due to the finicky Grenache grape and the powerful ocean wines that race through this track of land near Vandenberg Air Force Base. Adam uses 10% whole clusters in the vinification and ages for 15 months in old French oak barrels. 400 cases produced.
