Evening Land has a vast network of vineyards, consultants, and winemakers that are podium level in the trade. They strive to make wines that, “Reflect only the essence of the vineyard – the unique conjunction between a place, nature, and time.” Founded in 2005, Evening Land has seen some outstanding winemakers and consultants across it’s many vineyard projects including Dominique Lafon, Sashi Moorman, Isabelle Meunier, Larry Stone, Raj Par and the Prieur family of Burgundy. This blend comes from three vineyards, the young vines of Seven Springs, which is an estate owned plot and has been farmed biodynamic for the past six years, plus Rocky Hill and Eola Springs. The wine was fermented in open top oak and concrete tanks and did not see any new oak while being aged before bottling. Pair with seared tuna, cedar plank grilled salmon, or bacon stuffed mushrooms.
