Super low yields and minuscule production, to the point that apparently his neighbors joke and wonder? how they put food on the table every vintage. Ente is a wine that I have never had the chance to taste but alway hear people talking about. Their largest block of holdings is in 'Clos en l'Ormeau' located just outside the town center of Meursault. They farm, harvest, ferment, and cellar age this block to create separate cuvées based on vintage, vine age, and row position within the clos. The Bourgogne Blanc comes from vines planted in 1973, 1986, and 2002. The Meursault Village comes from vines planted in 1955 and 2003. The 'Clos des Ambres' vines were planted in the 1940s. This is highly complex Chardonnay that will age superbly. All harvesting is done by hand and these selections were age twelve months in neutral oak and 6 months in stainless steel before bottling. In the 'Les Referts' vineyard the domaine only has .22 hectares of vines, which is half an acre, and the vines were planted in 1965.
